Send them an invite from the Family tab using their phone number. They accept on their device and you both see a shared profile. Either of you can revoke access at any time.

Only if you grant them access to your profile. Family Health Records are siloed per profile by default — you choose exactly who sees what, and you can scope a share down to a single report.

Profiles you own are deleted along with your account. Profiles shared with you (where someone else is the owner) remain on their account — your access is simply revoked.
